This red skin potato salad is a little different that the typical potato salad, but it is definitely a crowd-pleaser! It is refreshing and full of summertime flavors.

Ingredients Needed For Red Skin Potato Salad

Some of the typical potato salad ingredients, some more unlikely ingredients.

Potatoes – Red potatoes are the obvious choice here.

Mayonnaise – Make your own if you’re feeling crunchy, or buy some from the store.

Sour Cream – This is the key to a perfectly creamy sauce.

White Wine Vinegar – White wine vinegar is much better than white vinegar here.

Dijon Mustard – I like Grey Poupon, but use your favorite Dijon.

Salt – This is an important one.

Dill – Dried dill or fresh, although the amount will vary.

Garlic Powder – This really makes the recipe.

Parsley – I prefer dried parsley.

How To Make Red Skin Potato Salad

Boil potatoes for about 15 minutes, until they are fork tender.

While potatoes are cooling, dice onion and celery. After that cube potatoes.

In a large bowl, combine all of the ingredients besides the potatoes.

Fold in cubed potatoes until everything is well coated.

Substitutions and Additions

  1. Sour Cream
    • Substitute with: Plain Greek Yogurt
    • Why: Greek yogurt contains more protien and also serves as a great substitute for sour cream in a pinch.
  2. Additions
    • Dill Pickles: I am a big fan of chopped up dill pickled in mayo based salads. I don’t always include them though, because I lot of people are pickle haters.
    • Red Chili Flakes: Add a little heat to your potato salad.

Where To Serve This Potato Salad

This salad is the perfect summer side. Bring it to a potluck or a picnic. It is a great accompaniment for sandwiches, burgers, or even a steak.

Storing Red Skin Potato Salad

This potato salad can be kept in the fridge in an airtight container for up to 5 days. Freezing is not recommended.
